On an average work day, I was home at a decent hour and decided that as I randomly had been donated fresh eggs, I’d bake! Yes bake! I’d juiced some apples a few weeks back, and rather than bin the pulp I’d frozen it so out came the pulp!
Preheated the oven to 200°C.
Weighed out the flour, and sugar, and measured out the Baking powder and salt.
Mixed all the dry ingredients together.
And dug out some muffin cases from the depth of the cupboard.
Added in milk.
Whisked the eggs.
And added that to the mix too.
And stirred it altogether.
Stirred some more.
Scooped into the cases, with some left over into a cake tin too, and into the oven.
Patiently waited for the content to rise.
Left it for a little bit longer, and out the oven they came!
I think I’d probably over stirred the mix, and I must remember that maybe coring the apples before juicing would be best if I know I’ll be using the pulp for muffins at a later date. Perhaps I didn’t need the cases either, that was maybe the mix would have risen a bit more! But I’ve enjoyed them nonetheless!
